Ridge Gourd Salad
If there is one recipe all my diners ask me for, is this Ridge Gourd Salad ! š± I absolutely love using the most local, ignored and easily available Indian ingredients and convert them into surprises! Packed with nutrition and flavour, this salad can be easily made in any domestic kitchen across India. Iām very happy to share this with you here!
Ingredients
2 cups sliced Ridge Gourd
1/2 cup boiled Chana Dal
1/2 cup grated coconut
2 tbsp lime juice
1/2 cup pomegranate kernels
1 tbsp Chinese Sesame Oil
1 tsp brown sugar
1 garlic crushed and chopped fine
Salt & pepper
Directions
Blanch the ridge Gourd for 10 mins in hot salted water. Keep aside to cool
Make dressing of sesame oil, salt, pepper, garlic & brown sugar. Mix well
In a bowl mix the ridge Gourd, Coconut & pomegranate
Incorporate the dressing and keep aside for 5 minutes before serving
Serve cool
