Chicken Satay with Pineapple Relish
Tropical places need tropical recipes! So what is better than my Cashew Peanut Satay? 🐔 Made using Free Range Country Chicken, Cashew Satay Sauce served with Spicy Pineapple Relish! 😋😋😋 🌶
If you feel like making it, it’s really quite simple! You can replace the chicken with paneer or prawns!💁🏻♀ 💃🏻
Ingredients
6-7 pieces chicken breast (cut lengthwise)
1.5 cups roasted peanut paste
2 tablespoons soya sauce
1 lemon (juiced)
1 Lemongrass root (finely chopped)
1 teaspoon curry powder
1/2 cup pineapple (finely chopped)
1 teaspoon crushed red chili
1 tablespoon chopped coriander
1/2 teaspoon sugar
Salt to taste
Bamboo skewers
Oil for cooking
Directions
Marinate the chicken with peanut paste, soya sauce, lemon, Lemongrass, curry powder, salt
Leave refrigerated for 5-6 hours
Combine the pineapple with sugar, coriander, chili & salt and put aside
Skewer the chicken and cook on a grill pan until cooked well
Serve warm with pineapple relish
